"Chi
s'arrisica di bere
ad un piccolo bicchiere
fa la zuppa nel paniere".
t "La
Giostra", faithful disciples of the verse by the
Fiorentine poet Francesco Redi, wine is pured
in large glasses after having previously been "wined"
properly and after having decanted the bottle in the
sommelier manner: pouring off the wine in front of a
candle light to verify its limpidity. But the care of
each particular starts in the cellar, which is maintained
silent as a library, at a constant temperature of 12°-13°
degrees, dark, humid and well ventilated. An ideal combination,
to host the best label of Tuscan, Piedmontes and Italian
wines in general. All selected with competent care,
it's here they rest for at least six months before being
put on the menu: cunning rule of real connoisseurs.
