n Lorenese époque the first prohibitions to introduce dead beasts and sell their meat in Florence contributed to a higher standard of the steak. Nowadays, the Hapsburg Lorena princes respect and preserve jealously that antique attention for the quality and the freshness of the traditional tastes of the Tuscan cuisine. Not without "contaminating" it with the one of the empire and not without adapting it to the necessities (lightness and digestibility) of a modern life style. Taking into account the French gastronomist Brillat Savarin equation's: "The animals are pastured, man eats, only the intelligent man knows how to eat".
